Characteristics of the candle shaped chorizo extra
The candle shaped chorizo extra is a cold meat presented in a piece with 23cm long and 3cm width. It is vacuum-packed.
Its exterior has dark red colour with darker shades, although the interior is of a lighter red in which the fat pork white spots catch the eye. This cold meat tends to have a short period of curation due to the thickness of the piece. Normally it is not cured more that 3 months. The result is a Serrano chorizo perfect for snacks and sandwiches.
In its manufacture different white pig meat cuts are used mixed with fat pork from the same animal. The meat is grided and mixed with De la Vera paprika, olive oil, garlic and other condiments. Once mixed, these are stuffed in an artificial gut and are left to cure for 2-3 months in the Nieto Martín storerooms.
It has a delicate smell, and at the moment of eating it the skin needs to be taken out as it is not edible. It is recommended to be cut in thin slices with no more than half a centimetre thick. Once in mouth, this product shines due to its smooth flavour with a paprika and garlic finish taste.

White pig’s meat, Iberian pig’s meat, salt, lactose, dextrin, paprika, soy protein, milk protein, garlic, olive oil, dextrose, stabilizers (E 451), antioxidants (E 316 and E 331), scent, preservatives (E 250, E 252) and colouring agents (E 120).
