Fuentillezjos Farm has been the first cheese factory to obtain organic product certification for cheeses from La Mancha. Apart from the cheeses with the Manchego Designation of Origin, it makes other organic ones which stand out for their savor and the care with which they have been made.
The cheese we offer comes in a 200-gr. format. It has been wedge-shape cut. The rind is covered in a paste of rosemary herbs and honey, it has a yellowish-white colour and is aged for about 2 months, so it is considered a semi-cured cheese. It is vacuum-packed, sealed to preserve it and extend its life. The rind is not eaten since it is covered with this condiment, it is a completely natural cheese, has a delicate smell and in the mouth the presence of rosemary provides nuances that contrast with the honey. It has a delicate taste, a consistent but soft texture, easy to digest. It does not require any elaboration, can be eaten as it is.
