What is Suckling Pork Cascajares Roasted?

The roast suckling pork quarter is a very typical Spanish dish. It comes from the suckling pig and is called "Chochinillo" or "Lechón" in Spain. The meat is particularly tender and thanks to the perfect precooking, the suckling pig literally melts in your mouth.

How to cook baked Suckling Pork Carcajares Roasted 

To make this delicious baked suckling pig, follow the steps below:

  1. Remove the quarter of roast suckling pig in its sauces and drain the oil well.
  2. Preheat the oven to 190ºC.
  3. Place the quarter of suckling pig on the oven rack tray (at medium height).
  4. Place another tray underneath to catch the fat.
  5. Bake the quarter of suckling pig in the oven for approximately 45 minutes. 

*Check that the suckling pig skin is crispy. If not, continue baking until it is crisp.
