How to place the Reserve Serrano ham leg in the ham holder

If you have never cut ham in a ham holder, you may have doubts when it comes to placing it on its base, as well as cutting it properly.

There are two different ways to place the ham and at Gastronomic Spain we are going to explain which one will be the best for each occasion:

  • Hoof facing up: if you think the leg of ham is going to be eaten quickly, within 1 or 2 days, you can start the leg from the part with more meat, that is, the hoof of the ham located upwards. * For large families or family meals.
  • Hoof down: if the idea is to make the ham last and consume it slowly (several days or even weeks), the best option would be to start the ham hoof down. In this way, the thicker club continues to heal a bit while the stifle is consumed.
