Anchovies are one of the most special appetizers in Spain. They come from Santoña, a town located on the coast of Cantabria which has been dedicated to the fishing and canning industry since the Middle Ages. 

This appetizer is a type of oily fish known as Bocarte (European anchovy), although its scientific name is Engraulis Encrasicolus. Its size ranges between 15 and 20 cm long and it is abundant especially in the Cantabrian coast and the Mediterranean Sea. 

Consorcio is the leading brand of this delicious Spanish appetizer. Consorcio anchovies are elaborated using traditional methods in each of the product stages. 

-Sobado (rubbing) and filleting is inherited from grandmothers to granddaughters and from mothers to daughters. 

-The sobadoras require time and care to separate the anchovy fillets and remove the bones.
