Calçots Sauce ingredients
Tomato, olive oil, sunflower oil, water, almond, vinegar, spices, garlic, salt and stabiliser: xanthan gum. Allergens: may contain traces of nuts.
The authentic Calçotada
1. Choose good, fresh and well-covered calçots (covering them with earth so that they grow).
2. Put the calçots on a grill and cook them on both sides.
3. Once cooked, wrap them in newspaper to keep them warm until they are ready to eat.
4. To eat calçots, peel them: pick them by the green leaves and remove the charred leaves.
5. And dip them in the Calçots Sauce!
*To elaborate this incredible sauce, the ingredients are grinded in a mortar until the sauce is of medium consistency (neither thick nor thin).
This would be the traditional way of making the Calçotada, but it can also be made cooking the calçots in the oven (for 15-25 minutes at 200ºC) or grilling the calçots (for 10-15 minutes at maximum power).
