Characteristics of the pork loin from Teruel
We present to you a cured loin of pork made in Teruel, presented in a format of 400 gr and vacuum-packed. It is made by our ham supplier with Guarantee of Origin from Teruel, Jamones Carbó. It is a product made in an artisanal way and stuffed in a natural pork belly, although it is not edible.
Visually, the surface has an orange-ish colour due to the belly in which it has been stuffed. When cut, the slice has a brownish colour in the area closest to the surface, which gets pinker as it approaches the centre. As opposed to Iberian cured pork loin, the fat pork it can only be found in one side of the bark and it does not have that infiltration of the pork loin’s fat that exist in Iberian pigs. Its texture is firm and compact, at the time of eating it, it is recommended to cut it in thin slices due to that consistency.
