It is about 3 to 4 cm thick, and it is cure very lightly, just enough to air the surface of the chorizo, but leaving the inside very tender. Due to its short curing process and its thickness, it is an ideal chorizo for cooking.

It has an intense red colour, and it is not spicy, as sweet Paprika from La Vera is used.
