We present you an Iberian shoulder made by the company Copese, under the Eresma brand. A certified Iberian shoulder, made in Segovia, in the town of Coca and cured for 12 months.

Characteristics of the Eresma Iberian shoulder:

The Iberian shoulder has a weight of 4.5-5 kg. It is cured for about 12 months and has the white label that certifies that it is a bait Iberian shoulder. It is a whole shoulder, presented in a cloth sack with a cord to hang it up.

It is produced in Segovia by the company Eresma, part of the Copese group. It comes from pigs with a 50% Iberian breed, crossed with Iberian and Duroc breed pigs. It is a whole shoulder, cured for at least 12 months. A perfect balance between lean and fat.

The shoulder has an exterior colour with different shades of brown and yellow. It is possible that, as it is air-cured, there may be some mould on the surface, but this does not affect the quality of the product and is easily removes by wiping with oiled paper. When cut, the ham obtained from the shoulder has a reddish-brown colour. This slice has a section of fat on one side and at the other side the lean with infiltrations of fat. The marbling of the Iberian pig has healthy properties, as the fats contained are unsaturated and contain a large amount of Oleic acid.

In the mouth it has a pleasant flavour, has a great consistency due to its prolonged curation and the morphological characteristics of the shoulder itself. Its flavour is pleasant and it lasts in your mouth.
