We present a soft cheese made with pasteurised milk from Manchego sheep. It is a unique gastronomic treat capable of satisfying the most demanding palates. This certified organic cheese guarantees that all the processes and ingredients used in its production are totally natural, without pesticides, herbicides or chemical agents.
Carmen, one of the founders of Finca Fuentillezjos, describes this cheese as a signature organic cheese, which has been baptised with the name of “Queso la Boina”, due to the similarities between the cloth with which this cheese is wrapped and the traditional berets of the shepherds of La Mancha.

This cheese contains lactose. It is gluten-free, so it is suitable for coeliacs.
La Boina soft and Organic Sheep's Cheese characteristics:
We present you a peculiar cheese, different, which catches your attention as soon as you see it and that above all is very tasty. The Boina cheese weighs about 1.2 kg, it is an oval cheese, wrapped in a cloth with a little tie that gives it its peculiar name.
It is a whole cheese, matured for 1 to 2 months, made only with natural ingredients, which have been obtained without the use of pesticides, herbicides or chemical fertilizers.
This soft sheep's cheese is made from pasteurised Manchego sheep's milk. However, because it is an unconventional cheese, it does not resemble the classic Manchego cheese, nor is it certified by the Manchego Cheese Designation of Origin. Among other things, because it has a short maturation period, on the other hand, because of the way it is made, and the mould used.
Nevertheless, it is a delicious and unique cheese. The initial appearance of the cheese is highlighted by the curious little bundle with which it is wrapped, which gives it a rustic presence and enhances its value. Once we unwrap it, we see a piece of cheese weighing about 1.2 kg. It has a rounded shape, without edges and irregular, which shows its artisan side. The rind has a homogeneous greyish colour, it is a natural rind, it can be eaten and has a very thin thickness. It has a soft texture, due to the few weeks of maturation. In the mouth it is a delicate, smooth and balanced cheese, with a milky flavour, due to its short maturing period, and it is possible to distinguish these nuances of pasteurised Manchego sheep's milk.
Like the rest of the organic cheeses from Finca Fuentillezjos, the Boina is a country cheese, which is the name given to those cheeses that are made only with milk obtained from the dairy's own livestock. This is a way of controlling production, guaranteeing the welfare of the Manchego sheep and guaranteeing organic food and the quality of the raw material used to make this delicious artisan cheese.
