Albarracín Cheese is one of the most awarded cheeses in Spain by the World Cheese Awards. It is a semi-matured cheese since it is matured for between 4 and 5 months and has been soaked in red wine. This is the reason why its rind has such a characteristic purple colour.

This cheese is made in the province of Teruel, in the town of Albarracín, after which the product gets its name. It is a signature cheese, made using traditional methods. The milk is obtained from the dairy’s own livestock, which is why they control the process from the beginning until the end.

Albarracín Cheese with Red Wine is made with pasteurised sheep’s milk. It is a semi-ripened cheese with a maturing process of around 4 and 5 months. Part of this aging will be spent immersed in red wine from the land, which will give it certain organ electric properties and a very distinctive purple colour on the surface of the rind.

It has a smooth and pleasant flavour in the mouth that combines with the intense nuances provided by the wine.
