Semi-cured Manchego cheese is made from Manchego sheep's milk and is matured for a minimum of 1 to 3 months, depending on the size of the cheese. The texture that characterises semi-cured Manchego cheese is elastic, with a cream-coloured paste.

Semi-cured Manchego cheese is the least cured, compared to cured Manchego cheese and old Manchego cheese, but it is just as delicious and with a tender touch.
