V Navarra cheese characteristics

Our natural V Navarra cheese is characterized by being a matured latxa sheep cheese, made exclusively in Navarra and made from raw milk.

The latxa sheep is a sheep breed of the Autonomous Community of Navarra, and also of the Basque Country. In particular, this latxa sheep is found in the surroundings of the Urbense National Park, a natural area of the Comunidad Foral de Navarra and with an expansion of 21,408 hectares.

Raw milk is extracted from latxa sheep which is the basis to produce natural V Navarra cheese.

This wedge of V Navarra cheese has an excellent flavor, with a net weight of 250gr. And awarded the Gold Medal of the World Cheese Awards of 2015/2016.

Latxa Sheep

The Latza sheep is a breed native and protected by Navarre and the Basque Country. It is a small, rustic sheep that produces high quality milk, although limited in quantity (100 liters per season from January to July).

The Latxa sheep is characterized by being a hardy animal and capable of adapting to adverse weather conditions, common in Euskal Herreria.

These sheep follow pasture routes as their main rural food, in which they alternate between the valleys in winter and the high altitude pastures of the mountains of the Urbense National Park.
