Pork Chicharrón, the most international crust

As a curious fact, chicharrón comes from pigs, cows, chickens or lambs. It refers to a food in which, in some countries, it is obtained through the skin of the pig.

In other countries this pork fat is used to cook meat, while in others it consists of frying the pork skin, with or without meat.

In Spain it is known as pork rinds, but this name has spread throughout Latin America, giving a different meaning to all its forms of red-hot cooking.

How are fried crusts made?

Making fried pork rinds is very easy, but if because of your work or simply because of your laziness you don’t feel like cooking, Gastronomic Spain offers you this great vacuum-packed product. But, as we are generous, we are going to explain to you how you can make homemade pork rinds

1. First and foremost, wash the piece of pork skin well. We rub it on all sides with a lemon and then rinse it with warm water.
2. Once dried, we cut them very well into pieces of between 5 and 8 centimeters. Next, with a heavy-bottomed saucepan, add the water, salt and pork skin. Bring to a boil over high heat, stirring carefully from time to time for about 15 minutes.
3. After 15 minutes, lower the heat and let it boil for about an hour. In this way, the water will evaporate and, little by little, the pork will brown. * Take into account: stir every so often, so that the crusts are fried in their own fat.
4. While they are frying, you should add a little ice water and, thus, cause a thermal shock that turns them crisp.
5. Once the pork rinds are browned, remove and drain the excess fat and oil on absorbent paper. * While still warm, we can season them to the preference of consuming, such as pepper.

Differences between torrezno, ham rind and pork snout

Many of you will be wondering if they are the same, but with a different name. Well no. Is not the same.

We could say that the ham crust is a part of the torrezno. It is the fried pork skin, which is quite crunchy.

Therefore, torreznos are much more than a crust. It has the crunchy appeal that the crust presents us with, but adds the tenderness and juiciness of the lean bacon with its just point of fat. So, at first glance, it could seem the same snack, but for the palate it is totally different, because the torrezno has fat and the pork rind does not.

As for the pig’s snout, as the name says, it comes from the animal’s snout. It is made practically the same as torrezno, but there is a difference. The torrezno remains crijuente, while the pork snout becomes soft after frying.

Pigskin and pregnancy

The consumption of pork in pregnancy should be taken care of, but you take it well cared for and without excesses, you can safely enjoy it. It is a meat with a lot of protein, so it can provide the pregnant woman with a considerable amount of positive energy. For this reason, keep in mind that during pregnancy, the body requires additional amounts of protein to support the growth and development of the fetus.

In this way, if we can include pigskin in the pregnancy diet, while we maintain a care and accompany it with light foods such as vegetables.
