What is cooking chorizo?

Chorizo is made from minced meat and pork fat, seasoned with paprika, garlic, salt and other spices. All these condiments are embedded in a natural casing. Chorizo originates from Spain, although nowadays it is one of the most consumed cold meat around the world. Along with Iberian ham, it has managed to cross borders, in addition to being very influential in our country. Chorizo and ham have become a benchmark in Spanish gastronomy.

But, what about cooking chorizo?

Cooking chorizo is a traditional white cold meat from Latin America. It is also known as creole chorizo or Argentine chorizo. However, despite being a “foreign” chorizo, its consumption and manufacture takes place all over the world.

One of the most noticeable differences we can find in this type of cooking chorizo is the colour. The paprika provides that colour so characteristic of Spanish chorizo, while those that come from South America do not have that seasoning.

In Spain, it is made the same way but with the seasoning of paprika. Therefore, we perceive the creole chorizo as reddish. On the other hand, cooking chorizo is not cured. It is sold raw because it is made exclusively to be grilled. During this cooking process, the chorizo will release all its juices and its exquisite flavour.

Cooking chorizo is within the category of white chorizo, that is, chorizo made from the best pork lean, which is similar to salchichón, but has its own hallmark and a unique flavour thanks to its spices. Cooking chorizo offers us two different variants:

Differences between cooking chorizo and Spanish chorizo

It is evident that the differences between cooking and Spanish chorizo are notorious, although if we go to a Spanish supermarket, we will not know how to identify which one is which. First of all, the biggest difference is the colour, already discussed above. Normally cooking chorizo does not contain paprika, which is why it maintains the meat colour, although it is added to the Spanish chorizo, therefore, giving it the characteristic chorizo colour that we know.

Another outstanding characteristic is the curing process. While Spanish chorizo goes through an extensive and laborious curing and drying process,cooking chorizo does not. It is sold and bought raw, exclusively to be cooked on the grill and thus get all its flavour. Basically, it is made with white wine and spices. And in a maximum of 24 hours, it must be stuffed and cooked immediately.
