What is the Mackerel?

The mackerel is a type of blue fish well-known in Spain. It belongs to the scombroids family, and, it abounds, usually, in the Mediterranean Sea and Atlantic Ocean

It is a slim body, blue fish with two separated dorsal fins, short pectoral fins and one anal fin followed by seven small fins. It can reach measures of between 25 and 45 cm. of length and weighs up to 4.5 kg. 

It is dark blue colour and whitebelly, but is characterised by the bright green of the back with rippled back lines, which reach up to the middle side of the fish. 

It is known as well as ‘verdel’, ‘xarda’ or ‘sarda’ (Spanish words to name the Mackerel), and it is the final goal of an intense fishing due to its palatable meat.

How to prepare Tinned Mackerel in Sunflower Oil

To start preparing the tinned mackerel, first of all we must have the whole mackerel fish itself, if possible gutted and cleaned on the outside. 

The first step is to cut off the heads and then cook the whole mackerel in plenty of salted water (approximately 10-15 minutes). 

Once cooked, remove the skin and central bone. In this way, we obtain the white loins with their meat. 

Then, marinate them in sunflower oil and a little lemon zest. We can also add some aromatic herb, if you like it. To carry out the marinade, place the mackerel loins in a rectangular container one after the other. 

We leave the mackerel in sunflower oil for two days in the fridge and we will finally have our desired result: tinned mackerel in sunflower oil.
